Dried porcini mushrooms
Dried porcini mushrooms really add a touch of luxury to any camping trip. They take up hardly any weight in your backpack, but give an intense, savoury richness to risottos, soups and other dishes. They have a much stronger flavour than more common types of mushrooms like button, portobello or swiss brown.

Porcini mushrooms are most closely associated with Italian meals like risotto and pasta dishes, but they are grown in many parts of the world.
Where to buy
- You can often find dried porcini mushrooms in good delis. Many major supermarkets stock them as well.
- You should also be able to get dried porcini mushrooms online.
Substitutes
If you can’t find dried porcini mushrooms for your hiking trip, you might be able to buy dried shiitake mushrooms instead. They have a slightly less intense flavour and a meatier texture, but are a good substitute. Shiitake mushrooms also tend to be cheaper than porcini mushrooms, which is always a bonus!
Using this ingredient in camping meals
- Soak dried porcini mushrooms in hot (but not boiling) water for 25-30 minutes before use.
- Don’t throw away the water that the mushrooms have soaked in – it can be used for a delicious savoury stock for risottos and soups.
- 1 cup of dried mushrooms is roughly equivalent to 5 cups of fresh mushrooms.
