Shiitake mushrooms are incredibly flavoursome, with a lovely meaty texture. They are great in many camping meals, including soups and risottos. Dried shiitake mushrooms are very lightweight, and you can usually find them in supermarkets and Asian stores.

Using this ingredient in camping meals
- Soak dried shiitake mushrooms in hot (but not boiling) water for 25-30 minutes before use. A mesh bag can be useful for this.
- Don’t throw away the water that the mushrooms have soaked in – it’s full of flavour, and can be used for a delicious savoury stock for risottos and soups.
- 1 cup of dried mushrooms is roughly equivalent to 5 cups of fresh mushrooms.
